BIG Kale Pasta Salad

Ingredients

Dressing

  • cup olive oil
  • 3 Tbsp balsamic vinegar
  • 2 Tbsp mayonnaise
  • ½ Tbsp Dijon mustard
  • 1 clove garlic, minced
  • ½ tsp dried basil
  • ¼ tsp salt
  • ¼ tsp freshly cracked black pepper

Salad

  • 8 oz. penne pasta
  • 8 oz. chopped kale
  • 1 pint grape tomatoes
  • ½ red onion
  • 1 15oz. can chickpeas
  • ½ cup grated Parmesan

Instructions

  1. Prepare the vinaigrette by whisking together olive oil, balsamic vinegar, mayonnaise, Dijon mustard, minced garlic, dried basil, salt, and pepper until smooth.
  2. Boil water in a pot and cook the pasta until tender, then drain and let cool.
  3. Massage the kale with ⅓ of the dressing for 3-5 minutes until wilted.
  4. Slice the grape tomatoes in half and thinly slice the red onion.
  5. Combine the cooled pasta, kale, tomatoes, chickpeas, onions, and Parmesan in a large bowl.
  6. Pour the remaining dressing over the salad and mix until well combined. Season with salt and pepper to taste.
