Instructions
- Prepare the vinaigrette by whisking together olive oil, balsamic vinegar, mayonnaise, Dijon mustard, minced garlic, dried basil, salt, and pepper until smooth.
- Boil water in a pot and cook the pasta until tender, then drain and let cool.
- Massage the kale with ⅓ of the dressing for 3-5 minutes until wilted.
- Slice the grape tomatoes in half and thinly slice the red onion.
- Combine the cooled pasta, kale, tomatoes, chickpeas, onions, and Parmesan in a large bowl.
- Pour the remaining dressing over the salad and mix until well combined. Season with salt and pepper to taste.
