Kale Caesar Pasta Salad

Ingredients

  • 3 ½ cups Penne Pasta
  • ½ cups Kale, shredded
  • ¼ cup Almonds, toasted
  • 6 oz. Greek non-fat yogurt
  • 1 tbsp. Dijon Mustard
  • cup Parmesan cheese, grated
  • 2 tsp. Worcestershire Sauce
  • 2 cloves garlic, minced
  • ¼ tsp. salt
  • to taste black pepper
  • 4 tbsp. Lemon Juice
  • 2 tbsp. olive oil
  • 1-2 tbsp. milk (to thin if desired)
  • 2 tbsp. Chives, chopped
  • 2 tbsp. Parsley, chopped

Instructions

  1. Massage the kale with 2 teaspoons of olive oil until it darkens in color to make it more tender.
  2. Cook the pasta according to package instructions, then drain and cool.
  3. Mix all dressing ingredients in a bowl and whisk or blend until combined.
  4. Toss the kale and pasta together, adding the dressing gradually until coated to your liking.
  5. Top with sliced toasted almonds before serving.
