BBQ Pulled Pork

Ingredients

The pork

  • 3.25 lb pastured pork butt or shoulder

The sauce

  • cups BBQ Sauce

The seasoning

  • 4-6 cloves garlic, smashed

The seasoning

  • ¼ cup salt and pepper to taste

Instructions

  1. Remove netting from the roast if present and season generously with salt and pepper.
  2. Cover the pork with about ¼ cup of BBQ sauce and place it in a resealable plastic bag.
  3. Refrigerate overnight or for at least 6 hours.
  4. Place the meat in a Dutch oven, add smashed garlic cloves, and enough water to half cover the roast.
  5. Cover and cook in a 250°F oven for 5 hours.
  6. Drain all but about 1 cup of the liquid from the Dutch oven.
  7. Use two forks to shred the meat and mix it with the remaining cooking liquid.
  8. Add the rest of the BBQ sauce and mix until well combined.
  9. Cover and return to the oven for about 30 minutes until warmed through.
