Ingredients

The yogurt

  • 24 oz. plain yogurt or Greek yogurt

Mixed Berry Compote

  • 1 pint fresh raspberries
  • 1 pint fresh blackberries
  • 1 pint fresh blueberries
  • 3 tablespoons water
  • 2 tablespoons maple syrup
  • a dash cinnamon
  • a dash salt
  • 1 tablespoon arrowroot

Almond Granola

  • cups gluten free oats
  • ½ cup sliced almonds
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ cup maple syrup
  • 2 tablespoons melted coconut oil

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare a baking sheet with parchment paper.
  3. In a bowl, combine oats, almonds, cinnamon, and nutmeg.
  4. Add maple syrup and melted coconut oil to the dry ingredients and mix well.
  5. Spread the mixture on the baking sheet and bake for 10 minutes.
  6. Stir the granola and bake for another 10 minutes, then let it cool.
  7. In a saucepan, combine raspberries, blackberries, blueberries, water, maple syrup, cinnamon, and salt, and cook for about 5 minutes.
  8. Add arrowroot to the berry mixture, stir, and simmer for 2-3 minutes before cooling.
  9. To assemble, layer 2-3 tablespoons of berry mixture, followed by 4 oz. of yogurt, and top with granola.
