Ingredients

The chicken

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup pickle juice
  • ½ cup buttermilk
  • ½ cup all-purpose flour
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon powdered sweetener
  • 1 teaspoon cayenne pepper
  • 1 piece egg (beaten)
  • 1 tablespoon cooking oil (peanut oil recommended)

Sandwich toppings

  • 2 pieces buns (brioche recommended)
  • 4 slices dill pickle chips
  • 2 slices leaf lettuce (optional)
  • 4 slices fresh tomatoes (optional)

Chick-fil-A sauce

  • ¼ cup mayo
  • 2 tablespoons honey
  • 2 teaspoons BBQ sauce (hickory smoked)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon yellow mustard
  • ½ teaspoon xanthan gum

Instructions

  1. Brine the chicken in a mixture of pickle juice and buttermilk for 30 minutes.
  2. Combine flour, paprika, garlic powder, salt, pepper, and sweetener in a bowl.
  3. Dredge the chicken in the beaten egg, then in the flour mixture.
  4. Spray the air fryer basket with cooking oil and place the chicken inside.
  5. Air fry at 400 degrees for 15 minutes, then flip the chicken and air fry for an additional 5-7 minutes until crisp.
  6. Toast the buns in the air fryer for 3-4 minutes at 400 degrees.
  7. Assemble the sandwich with the chicken, toppings, and sauce.
