Ingredients

The chicken

  • 1 cup pickle juice
  • 4 oz thin uncooked boneless skinless chicken breast cutlets
  • 1 tbsp all-purpose flour
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp dried dill weed
  • ¼ tsp paprika
  • ¼ tsp sugar
  • 2 large egg whites
  • cup plain panko breadcrumbs
  • ½ tsp dried parsley flakes

The sandwich

  • 4 pieces sandwich rolls or hamburger buns
  • 4 leaves green leaf lettuce
  • 4-8 slices tomato
  • 4-8 slices sandwich style pickles
  • 2 tbsp light mayonnaise

Instructions

  1. Marinate chicken cutlets in pickle juice for 6-8 hours.
  2. Drain the chicken and prepare the seasoning mix with flour and spices.
  3. Coat the chicken cutlets in the seasoning mix.
  4. Dip each cutlet in beaten egg whites, then coat with breadcrumbs.
  5. Cook the chicken in an air fryer at 400°F for 6 minutes on each side, or in the oven at 425°F for 8 minutes on each side.
  6. Assemble the sandwiches with lettuce, tomato, chicken, pickles, and mayonnaise.
