Pickle-Brined Baked Chicken Tenders

Ingredients

The chicken

  • 1 & 1/4 lbs chicken tenders or skinless breasts cut into strips
  • 1 & 1/4 cup dill pickle juice

The coating

  • ½ teaspoon kosher salt
  • to taste black pepper
  • 1 large egg
  • 1 large egg white
  • ½ cup seasoned breadcrumbs
  • ½ cup seasoned panko
  • as needed cooking spray

Instructions

  1. Marinate the chicken in pickle juice for 8 hours in the refrigerator.
  2. After marinating, drain and dry the chicken with paper towels.
  3. Preheat the oven to 425°F and spray a baking sheet with cooking spray.
  4. In a bowl, combine the egg, egg white, salt, and pepper.
  5. In another bowl, mix the breadcrumbs and panko.
  6. Dip the chicken in the egg wash, then coat with the breadcrumb mixture.
  7. Place the chicken on the baking sheet and spray the top with cooking spray.
  8. Bake for 8 to 10 minutes, then turn the chicken and bake for another 6 minutes until golden.
