Pickle-Brined Baked Chicken Tenders

dill pickle juice
The coating

seasoned breadcrumbs

Instructions
- Marinate the chicken in pickle juice for 8 hours in the refrigerator.
- After marinating, drain and dry the chicken with paper towels.
- Preheat the oven to 425°F and spray a baking sheet with cooking spray.
- In a bowl, combine the egg, egg white, salt, and pepper.
- In another bowl, mix the breadcrumbs and panko.
- Dip the chicken in the egg wash, then coat with the breadcrumb mixture.
- Place the chicken on the baking sheet and spray the top with cooking spray.
- Bake for 8 to 10 minutes, then turn the chicken and bake for another 6 minutes until golden.
