Ingredients

The cake

  • 12 Tablespoons unsalted butter, very soft
  • 1 ¾ cups all-purpose flour
  • 4 oz unsweetened chocolate, coarsely chopped
  • ¼ cup Dutch-processed cocoa powder
  • ½ cup hot water
  • 1 ¾ cups sugar
  • 1 ½ teaspoons baking soda
  • 1 teaspoon table salt
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 2 large egg yolks

For greasing pans

  • extra butter
  • extra flour

Instructions

  1. Preheat the oven to 350°F and grease two 9-inch round cake pans with butter, dust with flour.
  2. In a heatproof bowl, combine the chopped chocolate, cocoa powder, and hot water over simmering water until melted and glossy.
  3. Set the chocolate mixture aside to cool.
  4. In a medium bowl, whisk together the flour, baking soda, and salt.
  5. In a small bowl, combine the buttermilk and vanilla extract.
  6. In a stand mixer, whisk the eggs and yolks until combined, then add 1 ¼ cups of sugar and whisk until fluffy.
  7. Switch to a paddle attachment, add the cooled chocolate mixture and mix until incorporated.
  8. Add the softened butter gradually, mixing well after each addition.
  9. Alternate adding the dry flour mixture and the buttermilk mixture, mixing until just combined.
  10. Divide the batter evenly between the prepared cake pans and smooth the tops.
  11. Bake for 25-30 minutes, or until a toothpick comes out with a few crumbs.
  12. Cool the cakes in the pans for 15 minutes before inverting onto a wire rack to cool completely before frosting.
