Ingredients

The pork

  • 6 small pork scallops

The vegetables

  • 18 thin asparagus spears
  • 1 red bell pepper seeded and julienned
  • 1 yellow bell pepper seeded and julienned
  • 1 orange bell pepper seeded and julienned

The seasonings

  • generous sprinkle Himalayan salt
  • generous sprinkle freshly ground black pepper
  • drizzle extra-virgin olive oil

Instructions

  1. Preheat a grill to medium-high.
  2. Sprinkle the scallops with salt and pepper.
  3. Place the vegetables in the center of each scallop.
  4. Roll the scallops around the vegetables and secure with butcher's twine.
  5. Sprinkle with more salt and pepper.
  6. Grill for 2 to 3 minutes per side, turning once.
  7. Drizzle with olive oil and serve.
