Instructions
- Preheat a grill to medium-high.
- Sprinkle the scallops with salt and pepper.
- Place the vegetables in the center of each scallop.
- Roll the scallops around the vegetables and secure with butcher's twine.
- Sprinkle with more salt and pepper.
- Grill for 2 to 3 minutes per side, turning once.
- Drizzle with olive oil and serve.
