Easy Paleo Cranberry Bars
Ingredients
The crust

The topping

fresh cranberries, picked over

agave nectar or honey

orange zest
Instructions
- Pulse pecans and dates in a food processor until ground.
- Add oil and salt, pulse until mixture forms a ball.
- Press crust into a greased 8 x 8 inch baking dish.
- Bake at 350°F for 8-12 minutes until lightly browned.
- For the cranberry topping, combine 4 cups cranberries, honey, and orange zest in a saucepan.
- Bring to a boil, then cover and simmer for 10-15 minutes until cranberries dissolve.
- Add remaining 2 cups cranberries and cook covered for 5 minutes.
- Remove from heat and cool for 10 minutes.
- Pour cranberry mixture over the crust.
- Refrigerate for 90 minutes to set.
- Serve.
