Instructions
- Combine the cooked quinoa, chopped kale, garbanzo beans, orange slices, pistachios, and pomegranate seeds in a salad bowl.
- In a separate bowl or jar, mix together the olive oil, pomegranate molasses, garlic, 1 teaspoon of sumac, dried mint, kosher salt, and black pepper.
- Dress the salad with the vinaigrette and toss to coat evenly.
- Sprinkle with the remaining sumac and fresh mint. Adjust seasoning with salt and pepper if needed.
- Serve immediately or store for up to 2 days.
