Ingredients

Blackened Seasoning

  • teaspoons Hungarian paprika
  • 2 teaspoons sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • ¼ teaspoon black pepper

Blackened Shrimp Nachos

  • ½ lb shrimp, peeled and deveined with tails removed
  • 3-4 pieces mini sweet peppers
  • 1 tablespoon blackened seasoning
  • 1 cup cheddar or Monterey Jack cheese, shredded
  • 1 piece jalapeño pepper, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 4 cups tortilla chips

Salsa Fresca

  • 1 medium tomato, diced
  • ¼ cup red onion, diced
  • 1 teaspoon cilantro, finely minced
  • 1 lime juice (to taste)
  • to taste sea salt

Guacamole

  • 2 pieces Hass avocados, ripe
  • ¼ cup tomato, diced
  • 1 teaspoon cilantro, finely chopped
  • 1 lime juice (to taste)
  • optional jalapeño or hot sauce

Instructions

  1. Preheat the oven to 400°F.
  2. Season the shrimp with blackening spices.
  3. Sear the shrimp in a pan over medium-high heat until done, then set aside.
  4. Place tortilla chips on a baking sheet lined with parchment paper.
  5. Top the chips with shrimp and sweet peppers, then add shredded cheese.
  6. Sprinkle cilantro and jalapeños on top.
  7. Bake in the preheated oven for 7-10 minutes until the cheese is melted.
  8. For the salsa, mix diced tomatoes, onion, cilantro, lime juice, and season with salt.
  9. For the guacamole, mash avocados and mix with diced tomato, cilantro, lime juice, and salt.
