Ingredients

  • 1 cup pumpkin puree
  • 3 large eggs
  • cup maple syrup
  • ¼ cup light brown sugar
  • cup olive oil or coconut oil, warmed
  • 2 tsp pumpkin pie spice
  • ½ tsp sea salt
  • ¼ cup coconut flour
  • ½ cup superfine brown rice flour
  • 1 cup almond flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ cup chocolate chips or dark chocolate bar, roughly chopped
  • to taste optional raw pepitas/pumpkin seeds, for garnish

Instructions

  1. Preheat the oven to 360°F and grease a muffin tin with coconut oil or use liners.
  2. In a large mixing bowl, whisk together pumpkin puree, eggs, maple syrup, oil, pumpkin pie spice, and salt until well combined.
  3. Add coconut flour and mix, letting it sit for a minute to absorb moisture.
  4. Stir in the brown rice flour, almond flour, baking powder, and baking soda until mixed.
  5. Fold in the chocolate chips.
  6. Distribute the batter into muffin cups and sprinkle pepitas on top if using.
  7. Bake for about 20 minutes or until a toothpick comes out clean.
  8. Let them cool before removing from the pan.
