Instructions
- Preheat the oven to 360°F and grease a muffin tin with coconut oil or use liners.
- In a large mixing bowl, whisk together pumpkin puree, eggs, maple syrup, oil, pumpkin pie spice, and salt until well combined.
- Add coconut flour and mix, letting it sit for a minute to absorb moisture.
- Stir in the brown rice flour, almond flour, baking powder, and baking soda until mixed.
- Fold in the chocolate chips.
- Distribute the batter into muffin cups and sprinkle pepitas on top if using.
- Bake for about 20 minutes or until a toothpick comes out clean.
- Let them cool before removing from the pan.
