Instructions
- Preheat the oven to 350ºF and line a muffin tin with 12 parchment paper liners.
- In a large bowl, combine almond butter, pumpkin puree, maple syrup, eggs, baking powder, pumpkin pie spice, and sea salt, stirring until smooth.
- Fold in any optional add-ins and scoop the batter evenly into the muffin liners using a 1/4 cup measure.
- Top with extra chocolate chips or walnuts if desired.
- Bake for 25 to 30 minutes until the muffins rise and feel firm in the center.
- Allow the muffins to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
