Ingredients

The muffins

  • 1 cup almond butter
  • ½ cup pumpkin puree
  • cup maple syrup
  • 2 large eggs
  • 2 teaspoons baking powder
  • 2 teaspoons Pumpkin Pie Spice
  • ¼ teaspoon fine sea salt

Optional mix-ins

  • ½ cup dark chocolate chips, walnuts, or raisins

Instructions

  1. Preheat the oven to 350ºF and line a muffin tin with 12 parchment paper liners.
  2. In a large bowl, combine almond butter, pumpkin puree, maple syrup, eggs, baking powder, pumpkin pie spice, and sea salt, stirring until smooth.
  3. Fold in any optional add-ins and scoop the batter evenly into the muffin liners using a 1/4 cup measure.
  4. Top with extra chocolate chips or walnuts if desired.
  5. Bake for 25 to 30 minutes until the muffins rise and feel firm in the center.
  6. Allow the muffins to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
