Ingredients

The muffins

  • 1 ½ cups fine almond flour
  • 1 cup canned pumpkin puree
  • 1 tbsp pumpkin pie spice
  • 4 large eggs
  • ¼ cup honey
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ¾ tsp baking powder
  • ½ tsp sea salt

The crumb topping

  • 2 tbsp coconut oil
  • 4 tbsp almond flour
  • ¼ cup coconut sugar
  • ¼ tsp pumpkin pie spice

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with liners or grease it.
  2. In a bowl, mix the crumb topping ingredients until crumbly and chill.
  3. In a medium bowl, whisk together the dry ingredients for the muffins.
  4. In another bowl, whisk together the wet ingredients for the muffins.
  5. Combine the wet and dry ingredients without overmixing.
  6. Divide the batter among the muffin liners and top with the crumb mixture.
  7. Bake for 25-29 minutes until a toothpick comes out clean.
