Instructions
- Preheat the oven to 350°F and line a muffin tin with liners or non-stick spray.
- In a large bowl, mix together pumpkin puree, almond butter, eggs, maple syrup, and vanilla.
- In a separate bowl, combine almond flour, baking soda, salt, and pumpkin pie spice.
- Add the dry ingredients to the wet ingredients and stir until combined.
- Fold in chocolate chips.
- Fill muffin tins about ¾ full and add extra chocolate chips on top if desired.
- Bake for 20-22 minutes or until a toothpick comes out clean.
- Let cool on a wire rack after ten minutes in the tin.
