Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 pound lean ground beef (90% or 93% lean)
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried thyme
  • 1 ½ teaspoons garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 6 ounces egg noodles (whole wheat if possible)
  • 16 ounces cremini baby bella mushrooms (sliced)
  • 2 tablespoons all-purpose flour
  • 1 15-ounce can beef broth (divided)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard (optional)
  • cup full-fat Greek yogurt (at room temperature) or sour cream
  • to taste chopped fresh parsley or thyme (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat and brown the ground beef with seasonings.
  2. Add sliced mushrooms and cook until they soften and brown.
  3. Sprinkle flour over the beef and mushrooms, then stir to coat.
  4. Pour in about one-third of the beef broth and stir to scrape any bits from the pan.
  5. Add Worcestershire sauce and mustard, then pour in the remaining broth and bring to a boil.
  6. Reduce heat and simmer for 10 minutes, stirring occasionally.
  7. Remove from heat and stir in Greek yogurt, adjusting seasonings as needed.
  8. Serve hot over cooked egg noodles, garnished with fresh herbs if desired.
