Ingredients

The noodles

  • 6 oz extra wide egg noodles

The beef mixture

  • 1 lb ground beef
  • ¼ large white onion, diced
  • 3 cloves garlic, minced
  • 4 tablespoons unsalted butter, separated
  • 8 oz crimini mushrooms, sliced
  • 1 teaspoon salt, separated
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fresh thyme, roughly chopped
  • ½ cup sour cream
  • cup nonfat Greek yogurt
  • ¼ teaspoon pepper

Instructions

  1. Cook the egg noodles in salted water until al dente, then set aside.
  2. In a large pan, brown the ground beef with salt, then add onion and garlic until cooked.
  3. Remove the beef mixture and set aside.
  4. In the same pan, sauté mushrooms in butter until browned.
  5. Whisk together beef broth and Worcestershire sauce, then add to the pan with mushrooms.
  6. Sprinkle flour over the mushrooms, then gradually add the beef broth mixture while whisking until thickened.
  7. Add fresh thyme, Greek yogurt, sour cream, and pepper, mixing until combined.
  8. Return the beef to the pan and heat until warm.
  9. Fold in the egg noodles and serve.
