Instant Pot Pork Chops and Rice

Instructions
- Sauté olive oil and chopped onion in the Instant Pot until softened.
- Add rinsed rice, water, and salt to the pot and stir to combine.
- Place the pork chops on top of the rice and add frozen peas and carrots without stirring.
- Lock the lid and cook on high pressure for 5 minutes.
- Allow the pressure to release naturally for 15 minutes before removing the lid.
- Transfer pork chops to a serving plate and stir the rice and vegetables before serving.
