Ingredients

  • 1 tablespoon olive oil
  • 1 cup long-grain white rice, rinsed
  • 1 cup water
  • 1 teaspoon sea salt
  • 4 pieces thin-cut boneless pork chops
  • ½ cup frozen peas and carrots
  • 1 piece onion, chopped
  • 3 pieces scallions, sliced (optional, for topping)

Instructions

  1. Sauté olive oil and chopped onion in the Instant Pot until softened.
  2. Add rinsed rice, water, and salt to the pot and stir to combine.
  3. Place the pork chops on top of the rice and add frozen peas and carrots without stirring.
  4. Lock the lid and cook on high pressure for 5 minutes.
  5. Allow the pressure to release naturally for 15 minutes before removing the lid.
  6. Transfer pork chops to a serving plate and stir the rice and vegetables before serving.
