Ingredients

The pork chops

  • 4 pieces pork chops

The seasoning and oil

  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

The vegetables and flavorings

  • 3 tablespoons butter
  • cup onion, diced
  • 12 ounces mushrooms, sliced
  • 2 teaspoons garlic
  • 2 teaspoons fresh thyme leaves

The broth and thickening agent

  • 1 ¼ cups chicken broth, divided
  • 1 ½ tablespoons corn starch

The garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. 1. Heat the Instant Pot on sauté mode and add olive oil.
  2. 2. Season pork chops with salt and pepper, then brown them in the pot for 3-4 minutes on each side.
  3. 3. Remove the pork chops and melt butter in the pot.
  4. 4. Sauté onions and mushrooms for 5-6 minutes until tender, then add garlic and cook for another 30 seconds.
  5. 5. Stir in thyme and pour in 1 cup of chicken broth, then return the pork chops to the pot.
  6. 6. Close the lid, set to manual high pressure for 5 minutes, and let the pressure release naturally for 10 minutes.
  7. 7. Carefully release any remaining pressure, remove the pork chops, and set aside.
  8. 8. Return the pot to sauté mode, mix corn starch with the remaining broth, and add to the pot.
  9. 9. Simmer until the gravy thickens, then spoon it over the pork chops and garnish with parsley.
