Instant Pot Pork Chops

Instructions
- 1. Heat the Instant Pot on sauté mode and add olive oil.
- 2. Season pork chops with salt and pepper, then brown them in the pot for 3-4 minutes on each side.
- 3. Remove the pork chops and melt butter in the pot.
- 4. Sauté onions and mushrooms for 5-6 minutes until tender, then add garlic and cook for another 30 seconds.
- 5. Stir in thyme and pour in 1 cup of chicken broth, then return the pork chops to the pot.
- 6. Close the lid, set to manual high pressure for 5 minutes, and let the pressure release naturally for 10 minutes.
- 7. Carefully release any remaining pressure, remove the pork chops, and set aside.
- 8. Return the pot to sauté mode, mix corn starch with the remaining broth, and add to the pot.
- 9. Simmer until the gravy thickens, then spoon it over the pork chops and garnish with parsley.
