Instant Pot Autumn Apple Pork Chops

Ingredients

The main ingredients

  • 3 pieces Apples (sliced about ¼" thick)
  • 1 small Sweet Onion (thinly sliced)
  • 2-4 pieces Pork Chops (bone-in, ¾")
  • 1 Tbsp Vegetable Oil
  • ¼ cup Water (plus 1 Tbsp, divided)
  • 4 Tbsp Butter (unsalted)
  • 4 Tbsp Brown Sugar
  • ¼ tsp Cinnamon
  • ¼ tsp Nutmeg
  • 2 Tbsp Corn Starch
  • 3 Tbsp Cold Water

Optional ingredients

  • 2-4 pieces Small Potatoes (optional)
  • to taste none Chopped Pecans (optional)

Instructions

  1. Prepare the apples by coring and slicing them.
  2. Slice the onion and set aside.
  3. Season the pork chops with salt and pepper.
  4. Turn the Instant Pot to Sauté mode and add oil when hot.
  5. Brown the pork chops on each side for about 4 minutes and set aside.
  6. Cook the onion with 1 Tbsp water until translucent, then add butter.
  7. Add the apples and ¼ cup water, stirring well.
  8. Place the pork chops on top of the apples without stirring.
  9. If using, add whole small potatoes on top of the pork chops.
  10. Seal the pot and set to cook for 10 minutes on Manual (or Pressure Cook).
  11. Let the pressure release naturally for 10 minutes, then manually release the rest.
  12. Remove the pork chops and potatoes, keeping them warm.
  13. Add the brown sugar mixture to the apple mixture and stir.
  14. Mix corn starch with cold water and stir into the apple mixture until thickened.
  15. Serve the pork chops with the warm apple gravy and garnish with pecans if desired.
