Instant Pot Autumn Apple Pork Chops

Instructions
- Prepare the apples by coring and slicing them.
- Slice the onion and set aside.
- Season the pork chops with salt and pepper.
- Turn the Instant Pot to Sauté mode and add oil when hot.
- Brown the pork chops on each side for about 4 minutes and set aside.
- Cook the onion with 1 Tbsp water until translucent, then add butter.
- Add the apples and ¼ cup water, stirring well.
- Place the pork chops on top of the apples without stirring.
- If using, add whole small potatoes on top of the pork chops.
- Seal the pot and set to cook for 10 minutes on Manual (or Pressure Cook).
- Let the pressure release naturally for 10 minutes, then manually release the rest.
- Remove the pork chops and potatoes, keeping them warm.
- Add the brown sugar mixture to the apple mixture and stir.
- Mix corn starch with cold water and stir into the apple mixture until thickened.
- Serve the pork chops with the warm apple gravy and garnish with pecans if desired.
