Ingredients

The pork chops

  • 3 pieces thick cut pork chops (about 1 inch thick)

The topping

  • ½ piece onion, diced
  • 1 piece apple, cored and diced into chunks
  • 1 tbsp ghee (or coconut oil for dairy free)
  • cup balsamic vinegar
  • tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Chop the onion and apple, and gather all other ingredients.
  2. Set the Instant Pot to 'Saute' and melt the ghee.
  3. Brown the pork chops for about 1-2 minutes on each side.
  4. Press 'Keep Warm/Cancel' after browning.
  5. Layer the onion and apple over the pork chops, then drizzle with balsamic vinegar.
  6. Sprinkle garlic powder, salt, and pepper over the top.
  7. Lock the Instant Pot lid and close the pressure valve.
  8. Cook on manual setting for 10 minutes, then quick release the pressure.
  9. Remove the pork chops and serve with the apple and onion topping.
