Ingredients

Spice Rub

  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon coarse salt
  • teaspoon ground cinnamon
  • ½ teaspoon dried thyme
  • teaspoon pepper

Pork Chops

  • 1 lb. bone-in pork chops, 1.5 inches thick
  • 2 tablespoons olive oil
  • 2 tablespoons whiskey or bourbon
  • 1 cup chicken broth
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon maple syrup
  • 1 tablespoon minced garlic
  • 1 tablespoon cornstarch

Instructions

  1. Prepare the spice rub by mixing the spices in a small bowl and set aside.
  2. Season both sides of the pork chops with the spice rub, massaging it into the meat.
  3. Turn the Instant Pot to the sauté feature and add olive oil. Sear both sides of the pork chops for 1.5 to 2 minutes until browned.
  4. Remove the pork chops and turn off the sauté feature.
  5. Deglaze the pot by pouring in whiskey and chicken broth, scraping the bottom to remove bits.
  6. Add apple cider vinegar, maple syrup, and minced garlic to the pot and mix to create the gravy.
  7. Place a metal trivet on top of the liquid and set the seared pork chops on the trivet.
  8. Seal the Instant Pot and set it to manual high pressure for 10 minutes.
  9. Allow the Instant Pot to naturally release for 10 minutes after cooking, then quick release the remaining pressure.
  10. Remove the pork chops and trivet, then whisk in cornstarch to thicken the gravy on sauté mode.
  11. Serve the pork chops topped with whiskey gravy and your favorite vegetable.
