Pork Chops

Instructions
- Prepare the spice rub by mixing the spices in a small bowl and set aside.
- Season both sides of the pork chops with the spice rub, massaging it into the meat.
- Turn the Instant Pot to the sauté feature and add olive oil. Sear both sides of the pork chops for 1.5 to 2 minutes until browned.
- Remove the pork chops and turn off the sauté feature.
- Deglaze the pot by pouring in whiskey and chicken broth, scraping the bottom to remove bits.
- Add apple cider vinegar, maple syrup, and minced garlic to the pot and mix to create the gravy.
- Place a metal trivet on top of the liquid and set the seared pork chops on the trivet.
- Seal the Instant Pot and set it to manual high pressure for 10 minutes.
- Allow the Instant Pot to naturally release for 10 minutes after cooking, then quick release the remaining pressure.
- Remove the pork chops and trivet, then whisk in cornstarch to thicken the gravy on sauté mode.
- Serve the pork chops topped with whiskey gravy and your favorite vegetable.
