Instructions
- Turn the Instant Pot on to the Sauté function and let it warm up.
- Mix Dijon mustard, half of the maple syrup, and pepper in a shallow bowl and coat the pork chops with this mixture.
- Add butter to the pot, then brown two pork chops for 2 minutes on each side. Repeat with the remaining chops and set them aside.
- Pour apple juice into the pot, scraping the bottom to release any browned bits.
- Cancel the Sauté mode, return the pork chops to the pot, and seal the lid.
- Set the pressure cooking time to 7 minutes for thinner chops or 9 minutes for thicker chops.
- After cooking, let the pot sit for 8 minutes for natural release, then manually release any remaining pressure.
- Remove the pork chops and add the reserved mustard sauce, remaining maple syrup, and pecans to the pot.
- Create a slurry with corn starch and some sauce, then stir it into the pot to thicken the sauce.
- Serve the pork chops smothered in the maple mustard sauce.
