Ingredients

The sauce

  • 3 Tablespoons Dijon Mustard
  • ½ cup Real Maple Syrup
  • ¼ teaspoon Pepper
  • ½ cup Apple Juice or Cider
  • 1 Tablespoon Corn Starch

The pork chops

  • 4 pieces Pork Chops, ½" to ¾" thick, bone-in
  • 2 Tablespoons Butter
  • ¾ cup Pecan Halves

Instructions

  1. Turn the Instant Pot on to the Sauté function and let it warm up.
  2. Mix Dijon mustard, half of the maple syrup, and pepper in a shallow bowl and coat the pork chops with this mixture.
  3. Add butter to the pot, then brown two pork chops for 2 minutes on each side. Repeat with the remaining chops and set them aside.
  4. Pour apple juice into the pot, scraping the bottom to release any browned bits.
  5. Cancel the Sauté mode, return the pork chops to the pot, and seal the lid.
  6. Set the pressure cooking time to 7 minutes for thinner chops or 9 minutes for thicker chops.
  7. After cooking, let the pot sit for 8 minutes for natural release, then manually release any remaining pressure.
  8. Remove the pork chops and add the reserved mustard sauce, remaining maple syrup, and pecans to the pot.
  9. Create a slurry with corn starch and some sauce, then stir it into the pot to thicken the sauce.
  10. Serve the pork chops smothered in the maple mustard sauce.
