Ingredients

Dough

  • 2 and 3/4 cups all-purpose flour
  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • 1 teaspoon lemon zest
  • ¾ cup whole milk
  • 3 tablespoons unsalted butter
  • 2 and 1/4 teaspoons Platinum Yeast or instant yeast
  • 1 large egg

Filling

  • ¼ cup unsalted butter
  • ¾ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon lemon zest

Lemon Cream Cheese Icing

  • 4 ounces full-fat brick cream cheese
  • 1 tablespoon unsalted butter
  • ¾ cup confectioners’ sugar
  • 2 tablespoons lemon juice

Instructions

  1. 1. Whisk the flour, sugar, salt, and lemon zest in a large bowl.
  2. 2. Heat the milk and butter until warm, then whisk in the yeast until dissolved.
  3. 3. Pour the milk mixture into the dry ingredients, add the egg, and mix until a soft dough forms.
  4. 4. Knead the dough on a floured surface for 3–5 minutes until smooth.
  5. 5. Let the dough rest for 10 minutes.
  6. 6. Roll out the dough into a rectangle, spread with softened butter, and sprinkle the filling mixture over it.
  7. 7. Roll the dough tightly and cut into 10–12 rolls.
  8. 8. Place the rolls in a greased pan and let rise for 60–90 minutes.
  9. 9. Preheat the oven and bake the rolls until lightly browned.
  10. 10. While baking, prepare the icing by beating the cream cheese, butter, confectioners’ sugar, and lemon juice until smooth.
  11. 11. Spread the icing over warm rolls and serve.
