Ingredients

The base

  • 2 cups chicken stock
  • 2 cups whole milk
  • 1 cup coarse cornmeal
  • 1 bay leaf
  • 1 teaspoon salt

The flavorings

  • 2 tablespoons unsalted butter
  • 2 teaspoons minced garlic
  • 1 ½ teaspoons minced thyme
  • ¼ cup grated smoked gouda cheese
  • cup grated Parmesan cheese
  • to taste pepper flakes (optional)

Instructions

  1. Melt 2 tablespoons of butter in a saucepan over medium heat, then add garlic and thyme, stirring until fragrant.
  2. Pour in the chicken stock, bay leaf, milk, and salt, and bring to a boil.
  3. Once boiling, slowly add the cornmeal while whisking constantly to prevent lumps.
  4. Reduce heat to low, cover, and stir vigorously every 10 minutes for about 25 minutes until thick and creamy.
  5. For extra creaminess, cook for an additional 5 minutes.
  6. Stir in the cheeses and remaining butter, adjusting seasoning to taste.
  7. Serve hot, garnished with additional cheese, butter, and/or pepper flakes.
