Creamy Polenta

Instructions
- Melt 2 tablespoons of butter in a saucepan over medium heat, then add garlic and thyme, stirring until fragrant.
- Pour in the chicken stock, bay leaf, milk, and salt, and bring to a boil.
- Once boiling, slowly add the cornmeal while whisking constantly to prevent lumps.
- Reduce heat to low, cover, and stir vigorously every 10 minutes for about 25 minutes until thick and creamy.
- For extra creaminess, cook for an additional 5 minutes.
- Stir in the cheeses and remaining butter, adjusting seasoning to taste.
- Serve hot, garnished with additional cheese, butter, and/or pepper flakes.
