Creamy Cheesy Polenta

Instructions
- Step 1: Bring milk and 3 cups water to a boil in a medium saucepan over medium-high heat.
- Step 2: Reduce heat to medium and whisking constantly, gradually add polenta; bring to a simmer.
- Step 3: Reduce heat to low, cover the pan, and cook, whisking every 10–15 minutes, until thickened and no longer gritty, about 30–35 minutes.
- Step 4: Remove from heat and add Parmesan, butter, and salt; whisk until melted and polenta reaches a porridge consistency, about 1 minute.
- Step 5: (Optional) Polenta can be made 3 hours ahead and stored covered at room temperature. Reheat over medium-low, adding milk as needed.
