Creamy Polenta

Ingredients

  • 1 cup stone-ground polenta
  • 4 to 4½ cups water
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon sea salt

Instructions

  1. Pulse the dry polenta in a blender to make the granules less coarse.
  2. Sift through the blended polenta to break up any lumps.
  3. In a medium pot, bring 3 cups of water to a high simmer.
  4. Slowly whisk in the polenta while stirring constantly.
  5. Add 1 more cup of water and simmer for 15 minutes, stirring frequently.
  6. If the polenta is too thick, whisk in the remaining ½ cup of water.
  7. Turn off the heat and whisk in the olive oil and sea salt.
  8. Cover and let stand for 5 minutes before serving.
