Ingredients

Base Ingredients

  • 3 cups water
  • 1 teaspoon salt
  • 1 cup dry polenta (cornmeal)

Optional Mix-ins

  • ¼-½ cup grated Parmesan cheese
  • 1-2 tablespoons store-bought pesto
  • ¼ cup finely chopped red bell pepper
  • 2 tablespoons minced kalamata olives
  • 3 tablespoons minced flat leaf parsley
  • 2 tablespoons butter

Instructions

  1. Bring a pot of salted water to a boil.
  2. Add the dry polenta to the boiling water while stirring.
  3. Reduce heat to medium-low and cook the polenta for 20-25 minutes, stirring frequently until thick.
  4. Add any desired seasonings or mix-ins like cheese or herbs.
  5. Pour the cooked polenta into a well-oiled mold and let it cool for 10 minutes.
  6. Unmold the polenta and slice into 1-2 inch thick pieces.
  7. Serve immediately or pan-fry, bake, or grill until golden brown.
