Polenta Without Fear

coarse cornmeal (preferably stone-ground)

butter or extra virgin olive oil

freshly grated Parmigiano-Reggiano (optional)
Instructions
- Bring milk and 2 cups of water to a boil in a medium saucepan with a large pinch of salt.
- Adjust heat to simmer and add cornmeal gradually while whisking to prevent lumps.
- Once all cornmeal is added, return to a boil then reduce heat to low.
- Cook for 15 to 20 minutes, stirring occasionally and scraping the sides and bottom of the pan.
- If the mixture becomes too thick, whisk in water gradually.
- Season with salt and pepper to taste, then stir in butter or oil and cheese if using.
- Serve with sautéed greens and a fried egg.
