Polenta Without Fear

Ingredients

  • 1 cup milk (preferably whole milk)
  • 1 cup coarse cornmeal (preferably stone-ground)
  • to taste none salt
  • to taste none freshly ground black pepper
  • 2 to 4 tablespoons butter or extra virgin olive oil
  • ¼ cup freshly grated Parmigiano-Reggiano (optional)

Instructions

  1. Bring milk and 2 cups of water to a boil in a medium saucepan with a large pinch of salt.
  2. Adjust heat to simmer and add cornmeal gradually while whisking to prevent lumps.
  3. Once all cornmeal is added, return to a boil then reduce heat to low.
  4. Cook for 15 to 20 minutes, stirring occasionally and scraping the sides and bottom of the pan.
  5. If the mixture becomes too thick, whisk in water gradually.
  6. Season with salt and pepper to taste, then stir in butter or oil and cheese if using.
  7. Serve with sautéed greens and a fried egg.
