Ingredients

The base

  • 6 cups water
  • 1 ¾ teaspoons fine grain sea salt
  • 1 ½ cups polenta (coarse or medium coarse cornmeal)

The finish

  • 2 tablespoons butter or extra virgin olive oil
  • to taste freshly grated Parmesan cheese

Instructions

  1. Bring water to a boil in a medium saucepan.
  2. Add salt and whisk to create a vortex.
  3. Slowly pour in the cornmeal while maintaining a boil and stirring to prevent lumps.
  4. Reduce heat to low and simmer, stirring frequently, until creamy (about 30-35 minutes).
  5. Serve topped with butter or olive oil and grated cheese.
