Instructions
- Bring water to a boil in a medium saucepan.
- Add salt and whisk to create a vortex.
- Slowly pour in the cornmeal while maintaining a boil and stirring to prevent lumps.
- Reduce heat to low and simmer, stirring frequently, until creamy (about 30-35 minutes).
- Serve topped with butter or olive oil and grated cheese.
