Bacon Wrapped Asparagus Bundles

Ingredients

  • 1 pound asparagus, trimmed
  • 6 slices regular cut bacon
  • 1 teaspoon lemon pepper
  • 1 whole lemon, quartered
  • to taste olive oil spray

Instructions

  1. Preheat the oven to 400°F and place the rack in the middle position.
  2. Wash and dry the asparagus, trim and peel if necessary, then divide into six bundles.
  3. Wrap each bundle with a slice of bacon, overlapping slightly and tucking the end under the bundle, then place on a sheet pan.
  4. Spray the bundles with olive oil and season with lemon pepper, placing quartered lemon on the sheet pan.
  5. Roast for 8 minutes, then turn over and roast for another 8 minutes.
  6. Crisp the bacon under the broiler if necessary.
  7. Squeeze lemon over the bundles before serving.
