Easy Thai-Inspired Chicken Salad

Ingredients

The salad

  • 3 cups cooked shredded chicken
  • 6 cups shredded cabbage
  • 1 cup cilantro, chopped
  • 1 cup cashews, chopped
  • 1 medium carrot, shredded
  • 1 medium red bell pepper, diced
  • 1 medium cucumber, diced
  • 1 medium mango, cubed
  • 1 medium lime, juice
  • ¼ tsp sea salt

The sauce

  • ¼ cup creamy cashew butter
  • 2 tbsp sesame oil
  • 2 tbsp coconut aminos
  • 2 tbsp apple cider vinegar
  • 1 inch fresh ginger, peeled and grated
  • 1 clove garlic, minced
  • water to thin
  • to taste sea salt

Instructions

  1. Prep all of the salad ingredients and place them in a large bowl.
  2. Combine the ginger and garlic as noted and make the sauce.
  3. Mix all of the sauce ingredients in a bowl with a whisk.
  4. Pour the sauce over the salad and toss again.
  5. Serve and enjoy!
