Crunchy Thai Chicken Salad

Ingredients

The salad

  • 4 cups shredded napa cabbage
  • 3 cups cooked shredded chicken
  • 2 cups grated or matchstick carrots
  • 1 each red bell pepper, julienned
  • 1 cup fresh cilantro, chopped
  • ½ cup green onions, chopped
  • ½ cup wonton crisps or chopped peanuts

The dressing

  • 3 Tbsp rice vinegar
  • 2 Tbsp reduced sodium soy sauce
  • 2 cloves garlic, minced
  • 2 Tbsp honey
  • 1 Tbsp fresh ginger, peeled and minced
  • 2 tsp toasted sesame oil
  • 3 Tbsp olive oil

Instructions

  1. Combine all dressing ingredients in a small jar, seal, and shake well.
  2. In a large bowl, combine all salad ingredients and toss to mix.
  3. Drizzle the salad with the ginger-sesame dressing and mix until fully coated.
  4. Garnish with wonton crisps or chopped peanuts, serve, and enjoy!
