Instructions
- Marinate the shrimp with mirin, salt, ground white pepper, egg, and corn starch for 5 minutes.
- Mix all the ingredients for the sweet and sour sauce in a bowl and set aside.
- Heat oil in a deep skillet and deep-fry the shrimp in batches until golden brown. Remove and drain on paper towels.
- Discard the oil from the skillet, then stir-fry the bell peppers and pineapple for less than 1 minute.
- Add the sweet and sour sauce to the skillet and cook until it thickens.
- Add the fried shrimp to the skillet and stir to coat evenly with the sauce. Serve immediately.
