Apple Zucchini Crostini

apple, cut into ¼ inch dice

Instructions
- Preheat the oven to 350°F.
- Cut the bread into bite-sized pieces, brush with olive oil, and sprinkle with salt.
- Arrange the bread on a baking sheet and bake until golden, about 14 minutes, flipping once.
- Whisk the goat cheese with enough milk to make it fluffy and set aside.
- In a skillet, heat olive oil, add salt and apples, and sauté for 15 seconds.
- Add zucchini and cook for another 15-20 seconds, then remove from heat and stir in lemon juice and extra olive oil.
- Transfer the zucchini mixture to cool.
- Assemble by placing the zucchini mixture on the toasted bread and topping with goat cheese and black pepper.
