Ingredients

The cookie dough

  • cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter
  • ¾ cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • ¼ or ½ teaspoon almond extract (optional)

For decorating

  • to taste Royal Icing, Easy Glaze Icing, or Cookie Buttercream
  • to taste Assorted sprinkles

Instructions

  1. Whisk together the flour, baking powder, and salt in a bowl.
  2. In a separate bowl, beat the butter and sugar until creamy, then add the egg, vanilla, and almond extract.
  3. Mix in the dry ingredients until combined, adding more flour if the dough is too sticky.
  4. Divide the dough into two pieces and roll each out to about ¼ inch thick.
  5. Chill the rolled-out dough for at least 1-2 hours.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Cut the chilled dough into shapes and place them on the baking sheets.
  8. Bake for 11-12 minutes until lightly browned around the edges.
  9. Cool the cookies on a wire rack before decorating.
