Ingredients

The dough

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 cup unsalted butter
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract

For decorating

  • as needed Royal Icing
  • as needed coarse sugar
  • as needed sprinkles

Instructions

  1. Whisk together the flour, baking powder, and salt in a medium bowl.
  2. Cream the butter and sugar in a stand mixer until light and fluffy, then add the egg and mix well.
  3. Mix in the vanilla and almond extracts, then gradually add the dry ingredients until combined.
  4. Divide the dough in half, shape into balls, flatten into disks, wrap in plastic, and refrigerate for at least 2 hours.
  5. Preheat the oven to 350°F and line baking sheets with parchment paper.
  6. Roll out the dough to ¼-inch thick, cut shapes with cookie cutters, and transfer to the baking sheets.
  7. Bake one sheet at a time for 9 to 11 minutes until edges are golden.
  8. Cool on the baking sheets for 2 minutes before transferring to a wire rack to cool completely.
  9. Decorate as desired once cooled.
