Instructions
- Preheat the oven to 350°F.
- Line a cookie sheet with a silicone baking mat.
- In a mixing bowl, combine the sweetener and butter, then mix with a hand mixer.
- Add the cream cheese and mix well.
- Incorporate the egg and vanilla, mixing until combined.
- Gradually add the almond flour and mix until a dough forms.
- Use a cookie scoop to portion out 10-12 cookies on the sheet.
- Flatten each cookie slightly with your hands.
- Bake for 10-14 minutes until the edges are golden.
- Allow the cookies to cool for about 10 minutes on the sheet before transferring to a cooling rack.
- For icing, combine the ingredients and spread on cooled cookies.
