Ingredients

The Cookies

  • cups white whole-wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 12 tablespoons unsalted butter
  • ½ cup organic evaporated cane juice
  • 2 large eggs
  • 1 lemon zest (optional)
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon pure almond extract (optional)
  • 2 teaspoons honey (optional)

The Frosting

  • 8 ounces butter
  • 2 tablespoons cream cheese
  • pounds powdered sugar
  • 2 tablespoons half-and-half
  • 1 tablespoon meringue powder (optional)
  • 2 teaspoons pure vanilla extract
  • teaspoon pure almond extract (optional)
  • teaspoon pure lemon extract (optional)
  • natural food coloring (optional)

Instructions

  1. Sift the dry ingredients and set aside.
  2. Cream the butter and sugar until creamy, then add eggs one at a time.
  3. Mix in lemon zest, vanilla, almond extract, and honey if using.
  4. Gradually add dry ingredients and mix until combined.
  5. Form the dough into a disk, wrap it, and chill for several hours or overnight.
  6. Preheat the oven to 400°F and line baking sheets with parchment paper.
  7. Roll out the dough and cut into shapes, placing them on the baking sheets.
  8. Bake for 5-8 minutes until set and lightly browned.
  9. Let cool before decorating.
