Ingredients

The cookie dough

  • 1 lb. unsalted butter
  • 2 cups sugar
  • 2 large eggs, beaten
  • 2 tablespoons milk or almond milk
  • 6 cups whole wheat pastry flour
  • 1 teaspoon fine grain sea salt
  • 1 ½ teaspoons baking powder

The icing

  • 4 cups powdered sugar
  • 2 large egg whites
  • ~1 tablespoon - ¼ cup water to thin

Instructions

  1. Soften the butter in a stand mixer and beat until light and fluffy.
  2. Add sugar and mix well, then add eggs and milk, mixing until uniform.
  3. In a separate bowl, combine flour, baking powder, and salt; gradually stir into the butter mixture.
  4. Divide the dough into four parts, shape into disks, wrap, and refrigerate for 1-2 hours.
  5. Preheat the oven to 350°F and roll out the dough to ¼-inch thickness.
  6. Cut into shapes and arrange on parchment paper, leaving space between cookies.
  7. Chill the cut cookies briefly, then bake for 8-10 minutes until edges are toasty.
  8. Cool completely on a rack before icing.
  9. For icing, whisk together powdered sugar and egg whites until smooth.
  10. Thin with water as desired and color if preferred, then apply to cookies.
