Ingredients

The cookies

  • cups whole-wheat pastry flour
  • teaspoons baking powder
  • ¼ teaspoon salt
  • 10 tablespoons butter (softened)
  • ¾ cup sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract

The icing

  • cups powdered sugar
  • 7 tablespoons heavy cream

Instructions

  1. Whisk together the flour, baking powder, and salt in a bowl and set aside.
  2. Beat the softened butter and sugar with an electric mixer until fluffy, then add the egg and vanilla, mixing until well combined.
  3. Gradually add the flour mixture until blended and smooth, then form into a log about 11 inches long, wrap in plastic wrap, and freeze for at least 2 hours.
  4. Preheat the oven to 375°F. Peel the plastic from the log and slice into 1/8-inch thick pieces.
  5. Place the slices on a baking sheet about 2 inches apart and bake until golden brown, about 7 to 10 minutes.
  6. Transfer the cookies to a cooling rack and let cool completely before icing.
  7. For the icing, beat together the powdered sugar and cream until smooth, then add colors if desired and decorate the cookies.
