Super Easy Icebox Sugar Cookies

The icing

Instructions
- Whisk together the flour, baking powder, and salt in a bowl and set aside.
- Beat the softened butter and sugar with an electric mixer until fluffy, then add the egg and vanilla, mixing until well combined.
- Gradually add the flour mixture until blended and smooth, then form into a log about 11 inches long, wrap in plastic wrap, and freeze for at least 2 hours.
- Preheat the oven to 375°F. Peel the plastic from the log and slice into 1/8-inch thick pieces.
- Place the slices on a baking sheet about 2 inches apart and bake until golden brown, about 7 to 10 minutes.
- Transfer the cookies to a cooling rack and let cool completely before icing.
- For the icing, beat together the powdered sugar and cream until smooth, then add colors if desired and decorate the cookies.
