Ingredients

  • 2 cups milk
  • 4 large eggs
  • 4 tablespoons unsalted butter, melted
  • 10 oz all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ cup Parmesan cheese
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Preheat the oven to 450°F (232°C) and lightly coat a popover pan or muffin tin with melted butter.
  2. Whisk together the milk, eggs, and melted butter in a large bowl until blended.
  3. Add the flour, salt, black pepper, and Parmesan cheese, and mix well.
  4. Place the empty pan in the oven to heat for 7 minutes.
  5. Carefully remove the pan and fill the cups evenly with the batter.
  6. Bake for 18-20 minutes, then lower the oven temperature to 350°F (180°C) and continue baking until golden brown, about 15-18 more minutes.
  7. Cool briefly in the pan and serve warm.
