Ingredients

The batter

  • 3 large eggs
  • cups whole milk
  • cups all-purpose flour
  • teaspoons salt

For the pan

  • as needed none nonstick cooking spray

Instructions

  1. If the eggs and milk are cold, warm them up.
  2. Preheat the oven to 450°F (232°C) with the popover pan inside.
  3. In a large bowl, whisk the eggs and milk until frothy.
  4. Add the flour and salt, whisking until the batter is smooth with some lumps.
  5. Remove the hot pan from the oven and coat it with cooking spray.
  6. Fill each popover cup about three-quarters full with batter.
  7. Bake for 20 minutes, then reduce the temperature to 350°F (176°C) and bake for another 20 minutes until golden brown.
  8. Remove from the oven and immediately turn out the popovers onto a wire rack.
  9. Poke a small hole in each popover to let steam escape and serve immediately.
