Instructions
- If the eggs and milk are cold, warm them up.
- Preheat the oven to 450°F (232°C) with the popover pan inside.
- In a large bowl, whisk the eggs and milk until frothy.
- Add the flour and salt, whisking until the batter is smooth with some lumps.
- Remove the hot pan from the oven and coat it with cooking spray.
- Fill each popover cup about three-quarters full with batter.
- Bake for 20 minutes, then reduce the temperature to 350°F (176°C) and bake for another 20 minutes until golden brown.
- Remove from the oven and immediately turn out the popovers onto a wire rack.
- Poke a small hole in each popover to let steam escape and serve immediately.
