Crunchy Chicken Ramen Stir Fry

Ingredients

Stir Fry Sauce

  • 2 Tbsp soy sauce
  • 1 Tbsp toasted sesame oil
  • ½ Tbsp brown sugar

Sriracha Mayo Drizzle (optional)

  • 1 Tbsp mayonnaise
  • 1 Tbsp sriracha

Stir Fry

  • 1 boneless, skinless chicken breast (about ⅔ lb.) chicken breast
  • 2 Tbsp cooking oil
  • 1 14 oz. bag coleslaw mix (shredded cabbage and carrots)
  • 2 cloves garlic
  • 1 tsp grated fresh ginger
  • 3 pieces green onions
  • 1 3 oz. block ramen noodles (seasoning packet discarded)

Instructions

  1. Prepare the stir fry sauce by mixing soy sauce, sesame oil, and brown sugar in a small bowl.
  2. In another bowl, combine sriracha and mayonnaise for the drizzle.
  3. Mince garlic, grate ginger, and slice green onions.
  4. Crush the ramen noodles in their package and discard the seasoning packet.
  5. Chop the chicken into small pieces.
  6. Heat a skillet over medium-high heat, add cooking oil, and sauté the chicken until cooked through.
  7. Add garlic and ginger halfway through cooking the chicken.
  8. Once the chicken is cooked, add the coleslaw mix and sauté for about 2 minutes.
  9. Add the stir fry sauce and sauté for an additional 1-2 minutes until the cabbage is softened.
  10. Turn off the heat, stir in the crushed ramen, and top with green onions and sriracha mayo.
