Shrimp Fra Diavolo Pizza

Ingredients

The pizza base

  • 1 medium pizza dough, homemade or storebought
  • ¼ cup olive oil

The toppings

  • 1 lb large uncooked shrimp, peeled and deveined
  • pinch salt and black pepper
  • 5 cloves garlic, minced
  • 1 medium onion, thinly sliced
  • 1 cup dry white or red wine
  • 2 cups grape tomatoes, halved
  • 1 tsp crushed red pepper flakes
  • ¼ tsp dried oregano
  • 2 cups shredded mozzarella cheese
  • ½ cup fresh basil, chopped
  • grated Parmesan cheese

Instructions

  1. Preheat the oven to 425°F.
  2. Heat 1 Tbsp. of olive oil in a skillet and season the shrimp with salt and pepper before sautéing for one minute on each side.
  3. Remove the shrimp and set aside.
  4. In the same skillet, add 2 Tbsp. of olive oil and sauté the onions until translucent, then add garlic and sauté for one more minute.
  5. Deglaze the pan with wine, then add tomatoes, crushed red pepper, and oregano, simmering for 10-15 minutes.
  6. Brush the pizza crust with the remaining olive oil and sprinkle half of the mozzarella cheese on top.
  7. Spread the tomato mixture over the cheese, add the shrimp, and top with the remaining mozzarella.
  8. Bake for 10-12 minutes until the dough rises and the cheese melts, then garnish with basil and Parmesan.
