Ingredients

The base

  • 10 pieces eggs
  • ½ cup 2% milk
  • 1 teaspoon thyme

The filling

  • 4 oz prosciutto
  • 1 tablespoon olive oil
  • 1 pint cherry tomatoes
  • 2 cloves garlic
  • 3 cups baby spinach
  • 2 tablespoons shredded parmesan

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together the eggs, milk, and thyme in a large bowl.
  3. Heat an oven-safe skillet over medium heat.
  4. Add prosciutto to the pan and cook until slightly crispy, about 3-4 minutes.
  5. Remove the prosciutto and add olive oil, followed by cherry tomatoes; sauté for 3-4 minutes.
  6. Add garlic and sauté for 30 seconds, then add spinach and cook until wilted.
  7. Stir in parmesan cheese and the cooked prosciutto, then pour the egg mixture over the top.
  8. Let the mixture sit on medium-low heat for 4 minutes without touching it.
  9. Transfer the skillet to the oven and bake for 10-12 minutes until set.
  10. Garnish with more parmesan cheese and serve.
