Ingredients

The base

  • 2 ½ cups chicken broth
  • 15 ounces Alfredo sauce
  • 1 cup sun dried tomatoes

The protein

  • 16 ounces boneless chicken
  • 2 cloves garlic

Seasonings

  • 1 teaspoon sea salt
  • ½ teaspoon fresh ground pepper
  • ¼ teaspoon crushed red pepper flakes

The pasta and greens

  • 8 ounces penne
  • 4 ounces baby spinach

The topping

  • 2 ounces Parmesan cheese

Instructions

  1. Prepare the slow cooker with an aluminum foil collar for easy clean-up.
  2. Combine 1 ½ cups of chicken broth, ½ cup of Alfredo sauce, sun-dried tomatoes, chicken, garlic, salt, pepper, and red pepper flakes in the slow cooker and cook on high for 2 hours.
  3. Remove the chicken, shred it, and return it to the slow cooker.
  4. Add the pasta, remaining 1 cup of broth, and Alfredo sauce, then cook for an additional 30 minutes.
  5. Add spinach and cook until wilted, about 5 minutes.
  6. Sprinkle with Parmesan cheese and serve.
