Instructions
- Heat the cashew milk in a small saucepan over low heat until it simmers, then remove from heat.
- In a mixing bowl, whisk together the egg yolks, powdered sugar, and vanilla bean powder until combined.
- Slowly whisk in the warm cashew milk to avoid cooking the egg yolks, then return the mixture to the saucepan and heat until it thickens.
- Cover the saucepan and refrigerate the mixture until chilled.
- Pour the chilled mixture into an ice cream maker and churn for 5-10 minutes, or freeze it in a container, stirring every 10-15 minutes for the first hour if not using a machine.
