Ingredients

  • 1 cup cashews, soaked in water for 2 or more hours
  • 4 cups water
  • 1 tablespoon maple syrup (optional)
  • pinch salt (optional)

Instructions

  1. Soak the cashews in water for at least 2 hours, then drain and discard the soaking water.
  2. Add the soaked cashews to a blender with 4 cups of fresh water, and include maple syrup and salt if desired.
  3. Blend until smooth and creamy. If necessary, strain through a fine mesh strainer to remove any remaining pulp.
  4. Adjust flavoring as desired, adding more maple syrup or vanilla if you want a flavored milk.
  5. Store the milk in an airtight container in the fridge for up to 4 days.
